Lamb Chops ala Sandi

Sandi is determined to keep eating healthy so she made some Lamb Chops she dipped in bread crumbs, rosemary, thyme and a couple more ingredients. She then placed them on a cast iron pan with a bit of olive oil and crushed garlic.

 
She got this recipe from her Mediterranean Cookbook and everything in there is supposed to be healthy. She made a salad of fresh tomatoes and cucumbers and lots of feta cheese. She had some left over chopped salad from Rubio's Fish Taco the night before. The reason it was still edible is because it hardly had any dressing though there was something in the salad that made it spicy. She still had some left over Orzo salad she previously made which was very good.


The dinner was good, considering it was a very healthy one. If we keep this up, we may need to be tied down to prevent us from floating up into thin air!
