Yesterday, I stayed home all day and didn't leave the house. No make-up, no getting dressed no "trying to figure out what to wear". So, when it was time to figure out what to make for dinner, I was limited to whatever I had in our refrigerator.
I had eggs, feta cheese, lots of herbs from our backyard and some prosciutto. I thought I would try and make an omelette ala L'Amande Bakery, the french style. I went on the internet and watched Jacques Pepin's video on how to make a french omelette. It was quite simple except mine didn't look at all like his nor did it look like the perfect omelette that I love at L'Amande Bakery.
I must say though it turned out to be very good; cooked well outside but nice and soft inside. It just takes a lot of practice I suppose...
I served this with a green salad with olive oil and pomegranate balsamic vinegar dressing and a chewy spirulina roll I got from Cafe Dulce.
